It depends on the mode, and the difference isn't cosmetic. A black bar or an emoji overwrites the pixels — nothing can be recovered. Gaussian blur and pixelation only average the pixels, and enough signal survives that a neural network can re-identify the person well above chance. Under GDPR that keeps the photo in scope as pseudonymised data. Use the black bar when it has to hold.
